Maple Coffee Rubbed Pork Loin

  • Meat:
  • 2-2 1/2 lb Pork Tenderloin, 1 tbsp olive oil
  • Dry rub seasoning:
  • 1 tbsp finely ground Rosser’s Ridge Maple Coffee
  • 2 tbsp Rosser’s Ridge Granulated Maple Sugar
  • 1/4 tbsp ground cumin
  • 1 tsp smoked paprika,
  • 1/2 tsp kosher salt
  • 1 tsp unsweetened cocoa powder
  • 1/2 tsp ground coriander
  • 1/2 tsp cayenne pepper

Preheat oven to 400F. Combine dry rub ingredients in bowl. Evenly coat tenderloin with mixture. Heat oil in large skillet over medium-high heat. Add pork, sear until browned on all sides, about 5-8 minutes total. Bake on rimmed baking sheet until thermometer reaches145F, about 20-30 minutes. Let rest 5 minutes before slicing.
